So after binge watching MasterChef Canada I do as I always do, get the cooking bug. In the episode, I was watching they were making burgers. Well, I had just made a prime rib roast so I thought hmmmm....I'll make a sandwich. A few weeks earlier I started experimenting with making homemade bread weeks prior so I decided to make a fresh batch of the Japanese Milk Bread for my PRR Sandwich. I wanted to make some fries as well but because I'm trying to cut back on carbs (Haha that's a joke right considering I am making bread) I decided to make stuffed mushrooms with spinach and feta instead. Below you will find the recipe for the stuffed mushrooms. You can find the recipes for the Prime Rib Roast and the Japanese Milk Bread on my blog in the Food or All Post sections.
First thing you want to do is wash your mushrooms and remove the stems. I placed some paper towels on a cookie sheet and put the mushrooms on the it to dry while I prepared the other ingredients.
SPINACH AND FETA STUFFED MUSHROOMS
These mushrooms are a perfect appetizer or as a snack!
PREP TIME 20 minutes
COOK TIME 15 minutes
TOTAL TIME 35 minutes
24 large fresh baby bella mushrooms
1/4 cup chopped red onion
2 minced garlic cloves
tablespoon olive or vegetable oil
1 - 8oz. pkg cream cheese, softened
1 cup of fresh chopped spinach,
1/2 cup plus 2 tablespoons shredded Parmesan cheese, divided
1/2 cup crumbled feta cheese (you want this finely crumbled
1/2 teaspoon salt
INSTRUCTIONS
Remove stems from mushrooms: set caps aside. Finely chop the stems.
In a skillet, saute the chopped mushrooms, onion and garlic in oil until tender.
In a mixing bowl, beat cream cheese til smooth Stir in the spinach, 1/2 cup Parmesan cheese, feta cheese, bacon, salt and mushroom mixture.
Spoon into mushroom caps. Sprinkle with the remaining Parmesan cheese.
Place on a baking sheet. Bake at 400 degrees for 15 minutes or until golden brown.

ASSEMBLING THE GOURMET SANDWICH
First thing you will do is slice your beautiful fresh homemade bread into nice thick slices.

You will then add your desired condiments. For me I just added mayo and mustard. to the bread. I then added my tender prime rib slices.

Topped it with one of my stuffed mushrooms and drizzled it with a homemade lemon pesto. That recipe will be coming soon.
