These soft golden brown rolls are healthy and easy to make.
Prep Time: 1 hour 15 minutes
Cook Time: 25 - 35 minutes
Total Time: 2 hours max
Servings: 2 loaves
1 pkg active dry yeast
2 cups boiling water
1/2 cup warm water
1 Tbsp honey
1/4 cup butter melted and divided
2 Tbsp brown sugar
1 egg
1/2 cup molasses
2 tsp salt
1 cup old fashioned rolled oats
2 cups bread flour (you may need an addtl 1/2 cup)
2 cups whole wheat flour
Instructions
Step 1:
In a large bowl add your oats and 2 cups of boiling water. Let sit for about 10-15 minutes until oats have soaked up the water.
Step 2:
While your oats are soaking in the hot water, in a smaller bowl add the half (1/2) cup of warm water, yeast, and honey and let sit for about 10 minutes for the yeast to prove. When bubbly add 2 tbsp butter, sugar, salt, egg, and molasses and mix well.
Step 3:
Once the oatmeal has soaked up the water add the molasses mixture. Stir in about 2 cups of bread flour and 2 cups of the wheat flour, then stir until dough pulls away from sides of the bowl (you can use a stand mixer with a dough hook). Add additional flour as needed if the dough is still sticky.
Step 4:
Sprinkle a flat surface with more flour and turn out dough onto the flour-dusted surface. Knead dough until soft ball forms, adding more flour (You may end up using 4 1/2 cups) throughout the process.
Step 5:
Once soft and no longer sticky, spray a large bowl with cooking spray and place dough into bowl turning over once to coat. Place in a warm, draft-free spot and cover with a dishtowel. Let dough rise until it's doubled in size about 1 hour.
Step 6:
Once risen remove dough and turn out onto a clean surface. Split the dough into two sections. For bread loaves, shape each section into a log and place into 2 9"x5" bread loaf pans sprayed with cooking spray. For rolls cut dough into about 24 separate pieces and shape into balls and place onto a sheet pan covered with parchment paper. At this time you can preheat your oven to 350 degrees. Cover your dough again and let rise one more time until doubled in size. After the final rise use a pastry brush to brush on the egg wash, then add oat flakes on the top of each roll or your loaves
Step 7:
Place in the oven and bake 30-35 minutes for loaves and 20-25 minutes for rolls or until golden brown. Once baked, melt remaining butter; brush over rolls and serve.
This bread can be used as dinner rolls, slider buns, or you can just make regular bread loaves for sandwiches.
