Master the Tomahawk Steak at Home

For my tomahawk steak I kept it pretty simple. For maximum flavor all you need are a few ingredients. Let's get started.


Ingredients:

1 Tomahawk Steak (2-3lbs)

3 Garlic Cloves

2 Tablespoons Pink Himalayan Salt

2 Teaspoons Cracked Black Pepper

2 Sprigs of Fresh Rosemary

2 Teaspoons Olive Oil

3 Tablespoons of Butter


Step-by-Step


1. Unwrap and place steak on cutting board, you can rinse your steak and pat dry with paper towels.

2. Season very liberally with kosher salt and freshly ground pepper and olive oil. Let the steak come to room temperature.

3. Preheat your oven to 400-475 degrees.

4. In a heavy skillet or oven-proof pan, heat the 2 tablespoons olive oil over high heat until it's just starting to smoke. Lay the tomahawk steak into the skillet and sear 3 minutes. (Step back a bit since it will smoke and spatter.) Lower the heat to medium-high and cook the steak 3 minutes, without touching it. 


Note: The cooking time varies based on the weight of the steak. You will cook the steak 5 minutes per pound. So if your steak is 3 lbs you will leave it in the over for 15 minutes. This will give you a medium rare steak. If you want a well done steak extend your cook time, but PLEASE DON'T! You will ruin a perfectly good cut of beef. 

5. After the 5 minutes place the springs of rosemary in the skillet around the steak and place it in the oven for 10 -15 minutes. You can also wait until the you remove the steak from the oven to add your butter and rosemary to ensure the rosemary doesn't burn and you can baste your steak at this time.

6. When the steak is ready, take it out of the oven, and transfer it to a cutting board or baking sheet. Tent it with foil and let it rest 10 minutes.

7. Carve the steak, then drizzle with more of the butter and garlic. Or, if the steak is for one person, simply spoon the butter and garlic over the steak and serve.

This picture is prior to putting in the oven to finish cooking, so this is why the bone is still pink.
