Creamy Cauliflower Cheese Grits (Vegan Version incl.,)

A version of a Southern breakfast classic without the guilt of having carbs! This recipe can also be used with Vegan products. Links to vegan products included.

Prep Time: 5 minutes Cook Time: 25 minutes Total Time: 30 minutes

Ingredients:
2 cups cauliflower rice
1/4 cup heavy whipping cream (or Unsweetened Almond Milk for vegan)
1 ¼ cup milk (use 1/4 cup chicken broth for more flavor) (or Almond Milk and vegetable broth for vegans)
2 oz cream cheese (vegan cream cheese)
1/2 cup grated Sharp, Colby & Monterey cheese (use cheese of choice or vegan cheese )
2 tbsp butter (vegan butter)
1 tsp pink himalayan salt
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp black pepper
1 tsp chopped scallions or chives
Heat a saucepan over medium-low heat and add heavy cream, milk, water or broth, cauliflower, and seasonings. I prefer just using the milk, cream, and water. I find adding the onion and garlic powder adds enough flavor.
Stir on medium-low until the cauliflower rice is tender (20 minutes). You will need to stir occasionally as the cream will form a foam on top while cooking. Also, the finer the grain of cauliflower the less time it will take to cook. After 20 minutes add cream cheese and mix until fully incorporated. If the the consistency is still hard you may need to add more milk or heavy cream and let it simmer for an additional 5 minutes. If there's still a good amount of liquid in the pan and the consistency is soft you can spoon off the additional liquid.Add shredded cheese into the pan and allow it to melt.
Notes & Tips :
For a finer grain on the cauliflower you can add the cauliflower rice version or a coarsely chopped cauliflower to a food processor. You can also use a cheese grater. Also, for a creamier texture when using riced or coarsely chopped cauliflower use the back of a spoon, a fork, or potato masher to eliminate small chunks of cauliflower. You may need to let the cauliflower cook longer to get the consistency you prefer.

Garnish with chopped chives, scallions, or an egg over easy and ENJOY!
